Royal icing is a hard white icing made from softly beaten egg whites and confectioners sugar that dries to a smooth, hard, matte finish.

This is my go-to recipe for decorating cookies and cakes; it works wonderfully and has a beautiful smooth finish. Add food coloring or flavoring if desired.

Ingredients | Leftover Royal Icing Ideas

  • 1 (16 ounce) package confectioners' sugar
  • 2 egg whites
  • ¼ cup water, or as needed
  • Directions

  • Beat sugar and egg whites in a large bowl using an electric mixer on low speed until evenly combined and shiny, about 3 minutes. Add the water gradually, beating on medium-high until icing is smooth and the desired consistency, about 5 minutes.
  • You can mix the icing by hand using a wooden spoon if preferred. Add the confectioners' sugar gradually, mixing well after each addition until it is well-incorporated with the egg whites.
  • For a thicker consistency, add more confectioners' sugar.
